Squeak Out the Last Days of Summer with an Adults-Only Lemon Dessert

The limoncello that I didn’t make into a cocktail (it’s strong!) I decided to make into a simple (okay, somewhat simple) but flavorful and potent dessert – a Limoncello Mini Cake. As a side note, now I’m tempted to more season versions of limoncello – cranberry-cello? No pumpkin spice-cello! Basic.

Everclear smells like college by the way.

 

This is a simple dessert that will wow any grown up with a sweet tooth who loves lemon and spirits. After learning how to make Limoncello on my own, I couldn’t wait to incorporate it into a dessert. This dessert takes your favorite lemon cake recipe and turns it up a notch.

Take a cup of limoncello and brush it on your cooled mini cakes. Be generous. I knew I brushed enough because I wrapped up a tray of cakes and froze them overnight. Guess what? The cakes never froze. My freezer wasn’t on the fritz; it was the abundance of limoncello soaked in the cake.

Don’t over do it. You want it moist — not soggy.

The Glaze:

  • 2 cups of confectionary sugar
  • 1T fresh lemon juice
  • 1/2 cup of water
  • Whisk until smooth.

Drizzle that yumminess over the cakes. Finish it off with lemon zest as an additional topping.

Eat for brunch, dessert, or even breakfast. The perks of being a grown up. Yes, you have to pay bills and work, but you can get mini limoncello cakes whenever you damn well, please.

Warning: this dessert is not kid friendly. It is though very drunk auntie friend. Don’t eat drunk cakes and drive!
