Cashew Brittle

Ingredients

  • 1 ½ teaspoon baking soda
  • 1 teaspoon water
  • 1 teaspoon vanilla Use the good stuff
  • 1 ½ cups sugar
  • 1 cup water
  • 1 cup corn syrup light
  • 3 tablespoons butter
  • 1 pound salted cashews

Instructions

  1. Mix baking soda, 1 teaspoon water, and the vanilla. Set aside.

  2. Mix sugar, 1 cup water, and corn syrup in 3-quart saucepan.

  3. Cook over medium heat, stirring occasionally to 240° F on your candy thermometer, or use the ice water methods. The syrup should be in the softball stage.

  4. Stir in butter and cashews.

  5. Cook, stirring constantly to 300° F or until hard ball stage.

  6. Immediately remove from heat.

  7. Pour candy onto sheet pan and spread about 1/4 thick.

  8. Cook and break into pieces.
