How My Mother Utilized Baking to Tame a Moody Teen
Now I won’t say cookies solved all my parents’ problems, but it did help. As I mentioned before, I come from a long line of fabulous cooks and bakers. I thought it was a talent that everyone possessed. Everyone may not have this skill, but for me, baking is my therapy. This Mother’s Day I’m would like to share my recipe for Triple Chocolate Chip Cookies.

It kept my mind off of (not everything but you get the point) school, lack of boyfriends, and everything else kids go through. Baking made me happy, but what gave me joy is the praise from my family.
One of my favorite type of cookies to make is Chocolate Chip Cookies with nuts – always with nuts. Again people who are not allergic but prefer to go nutless is unfathomable to me.
Although my mother passed away years ago, I can’t help to think of her when I bake. When I make cookies, my dad jokes that she’s going to haunt my dreams so she can get one of those warm cookies.
My twist is taking a simple chocolate cookie and give it a slight twist by adding three types of chocolate chips. I challenge everyone to take a simple idea and make it your own in either a simple or major way to pass it on to others. Make them smile with Triple Chocolate Chip Cookies.
Triple Chocolate Chip Cookies
A personal twist to a standard chocolate chip recipe.
Ingredients
- 2 1/4 flour all purpose
- 1 tsp salt Kosher
- 1 tsp baking soda
- 1/2 cup brown sugar light
- 1/2 cup sugar granulated
- 2 eggs large
- 1/2 cup softened butter unsalted
- 1/2 cup shortening
- 1/3 cup semi-sweet chocolate chips
- 1/3 cup milk chocolate chips
- 1/3 cup white chocolate chips
- 1 cup pecans or walnuts chopped
Instructions
Directions

Mix flour, salt, and baking soda in a separate bowl.

Place softened butter and both sugars in a mixer and blend on medium speed or use a hand mixer. Mix well until smooth.

Add eggs and vanilla. Mix well.

Add flour, baking soda, and salt mixture. Mix well.

With a wooden spoon mix in the three types of chocolate chips and nuts.

Cool and enjoy.
Recipe Notes
You don’t have to add nuts, but that pretty lame.

I will have to look for one of those grill pans, as I eat a lot of chicken. During the warm months I do use a gas grill outside, but have been using a Forman grill in winter. I have found that it will make nice grill marks, but to cook all the way through, wind up with burned grill marks. I never considered just a quick grilling to get the marks and finishing up in the oven. Thank you for the post. now I won’t have to use ketchup to give my chicken a little moisture when I eat it. 🙂
I live in an apartment. I miss grilling outside so much!
If your chicken lacks moisture, use a teriyaki sauce rather than ketchup!
I’m wondering what is the driver for the high carb count on this? I’ve seen similar recipes with corn, and not quite the same level of carbs. Is it hidden in the seasonings perhaps?
Hi Alisha! Yes, the cookies are not the healthiest treats, but all in moderations as they say. Between the fat, chocolate, and nuts, it’s a treat that although offers happy tastebuds and memories, it does have high carbs.
Jury duty here lasts 4 months…I had to call in once a week for FOUR MONTHS. I was SO stressed out!! These cupcakes would have been a nice consolation prize though… 🙂
